Lean champignon and spinach cream soup

Ingredients

big carrots 1 PC.
large turnip 1 PC.
Champignon 300 g
spinach (I have frozen) 150 g
peeled potatoes 250 g
coconut cream 200 ml
vegetable oil 4-5 st. l.
garlic 2 tooth.
mushroom powder optional 1 tsp
dill 2-3 st. l.
salt taste
ground black pepper taste

Cooking method

Peel and chop the onions and carrots. Fry in vegetable oil in a heavy-bottomed saucepan. Add a clove of garlic.

Chop the mushrooms at random and add to the vegetables. Fry lightly.

Chop potatoes at random and place in a saucepan. Pour vegetables with water or vegetable broth so that they are covered. Salt. Boil. Reduce heat, cover saucepan. Cook until vegetables are ready.

Once the vegetables are cooked, add more garlic and spinach. Bring to a boil.

Pour in the cream. Bring to a boil.

Add mushroom powder, if any. Boil for a couple of minutes. Add dill.

We puree. Pepper, salt if necessary. Bring to a boil and turn off the heat. Cover the saucepan with a lid and let the soup stand for 5-10 minutes.
