Sea buckthorn cake and chocolate

Ingredients

For the biscuit:
Flour 50 g
Eggs 1 egg
Sugar 50 g
Cocoa 2 tbsp. l
For mousse:
Cream 350 ml
Sea buckthorn juice 200 g
Cream cheese 150
Powdered sugar 80 g
Milk 110 ml
Sugar 50 g
Gelatin 15 g
Water 70 ml
For ganache:
Dark chocolate 160 g
Cream 160 ml
Shape or ring 18 and 16 cm

Cooking method

Somehow I wanted a sea buckthorn cake. Well, without hesitation, one of three different recipes came together.

Beat the egg with sugar for about five minutes. Pour in the cocoa flour and stir with a spatula. Pour the dough into an 18 cm mold. Bake for 15-20 minutes. Cool the cake. Cut off the top crust and trim to a diameter of 16 cm. For the ganache, bring the cream to a boil and pour into the chocolate. Leave on for a couple of minutes. Then stir until smooth. Cool down.

Beat the cream a little. Beat the cheese with powdered sugar. Combine both mixtures, beat. Continuing to beat, pour in the sea buckthorn juice. Bring milk with sugar to a boil and dissolve the swollen gelatin in it and combine with mousse.

Pour some of the mousse into the mold and remove in the cold until easy to set. Then pour part of the ganache on top. Put away in the cold. Pour some more mousse over the ganache and so on until the end.

Put the cake on the mousse and slightly submerge it. Cover with cling film and put in the freezer for 7-8 hours until completely frozen.
Take the finished cake out of the mold and put it on a plate. Put the cake in the refrigerator until it is completely defrosted for 5-6 hours.

Note

If the form is metal, then cover it with cling film and line the sides with acetate tape. And you can collect the cake as usual - on the bottom of the cake cake and then mousse and ganache. No need to freeze.
