Mousse cake with yogurt Black currant

Ingredients

For the cake:
Flour 75 g
Sugar 70 g
Eggs 2 pcs
Cocoa 2-3 st. l
For mousse:
Yogurt 500 ml
Cream cheese 250 g
Powdered sugar taste
Currant 250 g
Sugar 60-80 gr
Gelatin 25 g
Water 100 ml
Form 18-20 cm

Cooking method

Beat eggs with sugar for 5 minutes. Add flour and cocoa and stir. Pour the dough into a mold with a parchment-covered bottom and bake at 180 grams for 15-20 minutes.
Cool the finished cake and cut off the top crust.

Pour sugar into the currants and beat with a blender. Then bring to a boil and boil until sugar dissolves. Add more sugar to taste. Rub through a sieve. Cool the resulting puree.

Pour gelatin with water and let it swell.

Beat cheese in a bowl, add yogurt and powdered sugar. Beat for 2-3 minutes. Melt gelatin add 2-3 tbsp. l mousse and mix and pour the gelatin mixture into the mousse, stirring continuously.

Pour mousse for white layers into a cup - it took me a half ladle for one layer. Add the currant puree to the rest. Mix.

Line the sides of the mold with acetate foil or strips from a file and lay the biscuit. Pour half of the white mousse on top. Put in the freezer for 10-15 minutes. Then pour the currant mousse and put it in the freezer too. Pour the second part of the white mousse a little from above. Put in the refrigerator until completely solidified.

Decorate the finished cake with hemispheres of currant mousse and white. Or to your liking.

How relevant! Currants are always heaps in the refrigerator, there is nowhere to go! And here as much as 250 g, and even used with yogurt - one benefit, but about beauty has already been said above.
