Ingredients

Dough
premium wheat flour 1 kg.
pressed yeast 25 g
salt 1 tsp
sugar 50 g
milk 300 ml.
sour cream 65 g
water 100 ml.
egg C1 1 PC.
butter 100 g
Filling
flour 150 g
ground fennel 1 tbsp. l.
ginger 1 tsp
nutmeg 1/2 tsp
turmeric 1/2 tsp
salt taste
butter 70 g
---------------- --------
yolk + 1 tbsp. l. milk for lubrication
melted butter for lubrication
poppy seeds, sesame seeds, nigella

Cooking method

  • Dough.

    Mix milk with water and sour cream. Dilute yeast. Pour into the bowl. Add egg, sugar and salt. Add soft butter. Add flour and knead the dough. The dough is quite dense. Remove the dough from the bowl. If necessary, knead a little by hand. Round off.

    Return the dough to the bowl. Cover. Place in a warm place for fermentation.

    Fermentation until doubled in volume. Approximately 1.5-2 hours.
  • Filling.

    Lightly fry the flour in a dry frying pan, breaking the lumps. Remove from heat. Add salt and spices. Stir.

    Pour in melted butter.

    Grind to crumbs, which should be oily and sculpted.
  • Assembly.

    Divide the dough into nine equal parts. Roll each part into a ball.

    Roll each ball thinly into a rectangle.

    Grease each rectangle with oil. Place the subsequent layers on top and also lubricate.

    Collapse all layers into a roll. Cut into washers 3-5 centimeters wide.

    Put each one flat. Stretch in the center. Tuck the end down.

    Put on a baking sheet, brush with yolk and sprinkle with any seeds.

Gogals are made smaller than mine. I got 8 pieces, but I should get 16, and maybe more.
