Raclette is a kind of Swiss cheese that gets its name from the French word racier - "to scrape". Swiss shepherds from the canton of Valais laid the foundation for the dish when they came up with the idea of melting cheese around the fire on skewers. Then they scraped off the smoked layer of cheese and wrapped various foods in it, most often baked potatoes. This method of making cheese was later called raclet. Today, the ancient Alpine dish is cooked in restaurants in special ovens. At home, raclette can be prepared in electric raclette makers.

Modern raclette rack KT-1647 has two tiers. On the lower tier, cheese is cooked in portioned pans, the upper tier is a combined brazier where you can cook meat, shrimp, grilled sausages, vegetables and much more. It is best to roast meat on a stone stove, and the ribbed surface of the non-stick panel is perfect for vegetables.

The rakletnitsa is equipped with a thermostat and a heating indicator.

Invite guests and relatives, and throw a raclette party. While the cheese is melting, guests will prepare their own filling: they will grill pieces of potatoes or peppers, and cook a steak or sausages on the stone. You only need to prepare the ingredients and put them on the table for the raclette. Enjoy a great evening in good company with a leisurely conversation accompanied by white wine.

Description of raclette grill Kitfort KT-1647

The device is equipped with a heating element, under which there are special recesses for portioned cheese pans. The top of the heating element is covered by a stone slab and a panel with a non-stick coating, which allows you to fry meat, mushrooms, sausages, vegetables or eggs. Top tier panels are often referred to as grills in recipes.

Above the heating element is the upper tier of the raclette, and under the heating element - the lower one. The raclette heater heats up the plate and the grill panel and simultaneously melts the cheese in the pans.

The temperature is controlled by a thermostat. You can smoothly change the temperature using the knob on the device body.

The heating indicator is on while the appliance is warming up. When the temperature of the heating element reaches the value determined by the thermostat, the heating will turn off and the heating indicator will go out. Then the heating will periodically turn on and off to maintain the temperature. Thus, during cooking, the heating indicator periodically lights up and goes out.

Before first use

Unpack the raclette holder and remove all packing material. Place on a flat, horizontal, stable surface at least 15 cm from walls and other objects and at least 10 cm from the edge of the table.If you are installing a raclette rack under a cabinet, keep in mind that there should be at least 50 cm of free space from the top of the device. The surface on which the device is installed must be heat-resistant, otherwise use heat-resistant pads.

Before using for the first time, wash the hob, hob and pans in warm water and mild detergent and dry. Wipe down the raclette holder with a dry cloth. Install the slab and panel on the top tier. Install the plate with the grooves upward along the perimeter, and with the central recess towards the temperature controller. Place the non-stick panel on the rails with the grooves. Connect the device to the mains, set the temperature control knob to "MAX" and warm up the device until the heating indicator goes out. Let the appliance run for 10-15 minutes. A small amount of smoke and odor may appear during heating, this is normal. Turn off the raclette maker and let it cool, then wipe down the panels. Rakletnitsa is ready for use.

Using

Lightly oil the top deck stove and panel or the food to be cooked on them. This will make it difficult for the product to adhere to surfaces.

Connect the device to the power supply. Set the desired temperature and wait for the raclette to warm up.

When the heating element reaches the operating temperature, the heating indicator will go out.

Place food on top of the top deck and in pans. Place the pans in the grooves on the bottom shelf of the appliance.

At the end of cooking, set the temperature control to “MIN” and turn off the raclette maker by disconnecting it from the power supply.

Use only wood or plastic scoops that can withstand high temperatures to remove and turn food. Do not use metal objects to avoid damaging the non-stick coating on the panel.

Tips & Tricks

Making a real Swiss raclette is easy. There are no hard and fast rules here. But there are tips to help you create a varied and delicious meal inspired by an Alpine dish.

Besides raclette cheese, which is quite expensive, other varieties can be used. Raclette with Gouda cheese, Roquefort, Tilsiter, Emmental, Svala, Gruyere, Cheddar will be no less tasty. Use any semi-hard cheese made from cow's or goat's milk. An interesting dish is obtained from suluguni.

Before cooking the raclette, remove the cheese from the refrigerator and let it sit for a few hours to breathe.

The most popular foods with which the Swiss serve raclette are jacket potatoes and sour-salted gherkins. Also, the following products are welcome for cooking according to the classic recipe:

  • zucchini zucchini, eggplant, pickled onions, young corncobs, tomatoes;
  • pickled pork, poultry, meat sausages, brisket, ham, steak;
  • French loaf, multi-grain bread, eggs, mushrooms, herbs;
  • salmon and seafood;
  • apples, pears, apricots, figs, mangoes, plums.

Cut the food into pieces that are not too thick, otherwise the cooking time will be excessively long.

The rakletnitsa is convenient in that you can cook several products at once in it. While the cheese is melting in portion pans, steak is cooked on a stone stove, and tomatoes and grilled eggplants are cooked on a non-stick plate. This device is suitable for creating your own recipes. During the cooking process, everyone can experiment with different foods and their combinations.

The stone slab is well suited for steak cooking, as its high heat capacity does not cool down immediately after placing cold meat on it.

Preheat the raclette maker before placing the next portion: wait for the heating indicator to go out, and only then put the food out.

Attention! Do not place pans on the top deck, as the plastic handles may melt.

When you cook on the non-stick panel, food acquires its characteristic striped pattern.You can get a checkered or diamond pattern if you turn the food pieces 90 ° or another angle during cooking.

The filling can be baked either on top of the panels or in pans with cheese.

If you will be eating straight from the pans, be careful not to scratch the non-stick coating with metal utensils.

Tea, white or fruit wine are considered ideal drinks for raclette.

A great idea is to have a raclette party for a children's birthday. Children 7-12 years old will love to design various dishes for themselves. Of course, under adult supervision.

Cleaning, care and storage

Unplug the Racklet Maker and make sure it is cool before cleaning and servicing.

Attention! Do not pour cold water on hot pans and the panel, as the coating may peel off from a sudden temperature drop. A stone slab can crack and split from temperature changes.

Wash the stone slab, non-stick panel and pans under running water and detergent. Do not use aggressive and abrasive detergents and scouring pads. Remember that the non-stick coating on the panel and pans can be easily damaged. Do not immerse the raclette maker in water or wash it under the tap. The heating element, the outer surfaces of the case and the surface of the lower tier, wipe with a damp, then dry cloth. If grease has spilled onto the surface of the lower tier, wipe it off with a paper towel or wipe it with a soapy sponge and then with a damp and dry cloth. Do not use abrasive materials to avoid scratching the surface.

Attention! After several uses, the surface of the lower tier may become indelibly stained with dripping grease. Since the surface is not in contact with the food being cooked, this will not affect the taste of your food.

Attention! Stains on a stone slab are caused by moisture that the slab absorbs from the food. This is not a malfunction. The stained stone slab gives a special flavor to the food being cooked.

Store the raclette in a cool, dry place out of the reach of children.
