Ingredients

Dough:
* Starter potato-hop 50 ml.
* Water 100 ml.

Cooking method

  • Start a dough (starter + water + flour = 2 times rise = settling when ready)
  • Before kneading, prepare food, weigh everything, measure. The fat should be softened, the processed cheese should be rubbed into a coarse grater.
  • Pour all the flour into the bowl, transfer the dough here, add water, add sugar, salt, and cheese. Start mixing. When the bun starts to form, add the butter and knead until smooth. The gingerbread man keeps its shape well. Slightly sticky due to fat, but lags behind to clean from the hands and walls of dishes.
  • Well, now send it to the heat for the rise. Since my dough was kneaded at 23 o'clock, it was more expedient to protect the container from warming, so that the dough could slowly rise exactly by morning. And so it happened - by 4 in the morning the bun was in all its splendor))
  • I immediately molded a loaf and left it the same way, protecting it from additional heating.
  • At 7 in the morning I was ready to bake, and the bread obediently waited for my awakening and did not run away anywhere (it was great again))
  • Heated the oven to 200 * C and baked at this temperature for 10 minutes, then lowered the heat to 180 * C and baked for another 30 minutes until ready.
  • Karavashik turned out to be blush, lightest. When tapped on the bottom, it was sonorous. When cooled on a wire rack, under a towel, the covers of the bread became simply the softest. The aroma of hot bread is correct, with a subtle nuance of "well-used", that is, not unleavened.

Note

Based on the different moisture content of flour, it may be required either more or less. Therefore, add the main volume to the batch and leave a little for regulation.

Baked in a glass microwave oven. Used non-stick lubricant.

I did it with minor changes - I put 100 grams of potato yeast and 50 grams of water in the dough. My yeast is not too fast yet, I put more of it. I added 100 grams of flour, it seemed to me just to the desired consistency. True, then, in the process of kneading the dough, I added flour, perhaps 120 grams of flour should be taken for the dough and everything will be fine.
The dough fermented at 22 degrees for 9 hours. When kneading the dough, I added cheese whey instead of water - it fit very well here. The cheese I had was soft President, so I just put it on with a spoon, without rubbing.
The gingerbread man turned out to be soft, sticky. I walked up warm for 5 hours, after the first two hours I did a warm-up.
In the form, he parted for another hour and a half and was a bit underdeveloped.
