Chocolate cupcake with beer from Natasha

Ingredients

egg 2 pcs.
butter 110 g
sugar 250 g
premium wheat flour 175 g
cocoa powder (bitter) 50 g / 20-25 g
dark beer 200 ml
soda 1 tsp
baking powder for the dough 1/4 tsp
dark chocolate (in pieces) 50 g

Cooking method

  • We turn on the oven at 180 C.
  • Beat the softened butter and sugar until fluffy.
  • Add eggs, beating after each.
  • Slowly pour the beer into the cocoa into a separate bowl (I usually put 20-25 g of cocoa powder, in my opinion more than enough for this cake), stirring so that there are no lumps. In another extra bowl, mix the flour, baking soda and baking powder. Alternately, in small portions, add cocoa - beer mixture, then sift part of the flour. Mix the ingredients thoroughly each time until smooth. The result is a mixture that is rather liquid, like thin sour cream.
  • Add chocolate, mix. (I like to add chocolate before putting the cake in the oven to distribute it evenly in the dough and to keep the cake nicely shaped).
  • Pour the dough into a 20 cm diameter mold, lined with baking paper and oiled with oil.
  • Put in the oven for about 40 minutes. But after 30 minutes, start checking so you don't dry out. The cake rises very high, it can be unusually soft and juicy. It turns out a very tasty chocolate piece, juicy, tender, with an interesting taste. It does not harden for a long time. Take the cake out of the mold with great care: it breaks easily.

It is recommended to mix cocoa powder with flour before kneading the dough, as well as significantly reduce its amount (probably by adding additional flour), replace the soda with baking powder for the dough (in accordance with the manufacturer's recommendations on the package) and use natural chocolate ( without substitutes for natural cocoa butter in the composition). It is difficult to say how the replacement will affect the structure and taste of the finished baked goods, since after the reaction of soda and ordinary cocoa powder, not only the acidity and color of the dough changes, but also its structure - it becomes more creamy.

A not very good result can be obtained when baking in a standard rectangular cake pan, since the cake is not baked for a long time, and with an increase in the baking time, a denser crust is obtained, which affects the taste of the finished cake.
