Pear marshmallow with lime and honey

Ingredients

pear puree 160 BC
lime puree 25 g
albumin or protein 12 (100) g.
sugar 200 BC
lime zest 1.5 tsp.
Syrup
sugar 250 g
agar 10 g
honey 100 g
water 130 ml.

Cooking method

The first time I worked with albumin. I like it.
The taste of marshmallow is "not for everybody" There is a bitterness from lime and the smell of honey. There is no pear taste and smell at all. But I liked it. Recommend!

Have you tried making eggs with protein? It needs 100 grams, do I understand correctly? Does the taste of this somehow change in comparison with the purchased albumin? Is the purchased albumin dry, if you need 12 grams?
And why is albumin put in this marshmallow, but not in other species?

Elena, the taste does not change. Albumin is a dry regular protein! You need 100 liquid protein. Any marshmallow can be made with either dry protein (albumin) or with regular protein. No difference. Whoever has what kind of protein does it with it.
