Ingredients

yogurt or kefir 500 ml
eggs 2 pcs.
sugar 30 gr.
vegetable oil 60 gr.
cornmeal or corn grits 65 gr.
wheat flour 285 gr.
salt 0.5 tsp
lemon acid 0.5 tsp
vanillin on the tip of a knife
soda 1 tsp

Beat eggs lightly with sugar, add kefir (I just ferment milk for this purpose), salt, citric acid and vegetable oil and mix thoroughly.
If you do not have corn flour, then grind corn grits in a coffee grinder and immediately add to the liquid component of our pancakes and let stand for 10 minutes. If you have corn flour, then skip the previous item and immediately pour it and wheat flour into a saucepan. Add soda and vanillin on top and mix quickly. It is not necessary to achieve smoothness of the dough. Lumps, if they are, and they will certainly not interfere with us.
Leave the dough for 10 minutes. Maybe less depends on the acidity of your yogurt.

As soon as you see that the surface of the dough looks like this, put the pan on the fire, grease it with oil and wait for heating. After the pan has heated up, reduce the heat. The further process takes place on low heat.
