Ingredients

eggplant 550 g
mustard powder 1 tbsp. l.
curry 1 tsp
eggs 2 pcs.
mushroom powder 50 gr.
frying oil a little bit
optional mayonnaise, garlic, salt

Cooking method

  • Cut the eggplants into cubes or cubes, but at least into stars if you like.
  • We mix it with the rest of the ingredients, except for the last point and leave it for a couple of hours to “make friends”. In the process, mix several times.
  • Fry in a little vegetable oil. The larger the pan, the better. You need to fry quickly, until golden brown. Turn off the heat and leave the “client to get to condition”.
  • And then you can invite to take a sample. You can proto like this, or you can add garlic, mayonnaise. Personally, I like the second option more.
  • They are good both warm and cold.

To simplify the process and less washing of dishes (I am lazy, to be honest), I put everything in a plastic bag. It is very convenient to mix in it, passing by, so that the eggplants are constantly enveloped in the mixture and evenly soaked.
I prepare the mushroom powder myself from the collected and dried mushrooms. In this case, there were boletus and white.

Tatyana, I cooked today eggplants with mushroom powder and even without eggs it turned out very tasty and tasted like mushrooms. My husband and grandson really liked it. Thank you, the combination is very pleasant, such a light note of mushrooms, but not the most delicate. I have superb eggplants this year.
