Oat bread without kneading

Ingredients

* Starter culture 100% hydration 100 g
* Water 440 ml.
* Hercules small 160 BC
* Wheat flour 350 BC
* Salt 1 tsp
* Sugar option

Cooking method

  • Whole wheat wheat sourdough was used.
  • Mix ingredients.
  • Place the dough in a greased dish in which the bread will be baked. Close the lid or tighten with foil (I used a glass pan with a lid for the microwave oven)
  • Put in the refrigerator overnight.
  • In the morning, get it for heating for 2-4 hours (as soon as there are signs that the dough has come to life, put it in a cold oven) Set the temperature to 200 * C and bake with steam for 20 minutes.
  • Then we remove the steam, reduce the heat to 180 * C and bake for about 45-50 minutes more.
  • I have added dried onion 30 g to the dough. During fermentation, it recovered and gave some moisture during baking. Therefore, it was baked a little longer, which affected the thickness of the crust. But this did not affect the taste of the product. The loaf turned out to be light.
  • The crumb is nostril, dense, slightly rubbery, which is typical for bread without kneading.
  • I'm happy with the result. Moreover, the bread is, in fact, bran. I took the flour, put according to the recipe, from a mixture of premium wheat and wheat c / s - with this I also "helped" the bread.
