Rye cupcake with gooseberry

Ingredients

whole grain rye flour 150 g
almonds (grind) 50 g
butter 75 g
honey 50 g
sugar (dark brown) 100 g
baking powder 2 tsp
milk 75 ml
eggs 1 PC
spices (cinnamon, cloves, cardamom) 1, 5 tsp
gooseberry 150-200 g

Cooking method

  • Prepare the gooseberries: wash, dry, trim the tails.
  • Mix flour, ground almonds and baking powder.
  • In a saucepan, combine butter, honey, sugar, put on fire and, stirring, bring the mixture until the sugar dissolves.
  • Cool the mixture to room temperature, pour in milk, add an egg, stir.
  • Combine dry and liquid mixture, mix.
  • Add gooseberries, mix the dough gently.
  • Put the dough in a prepared mold, sprinkle on top with either coarsely chopped nuts, or almond petals, or with streusel crumbs.
  • Bake in an oven preheated to 180 g for 45-50 minutes until tender.

When the berries are mixed, the aroma of the dough resembles the aroma of dumplings with berries, and the finished cake appetizingly combines berry and milky rye notes, seasoned with a delicate aroma of cinnamon (the amount has been reduced to 1/3 tsp). Nice recipe.
