Ingredients

cherry puree 500 BC
sugar 450 BC
pectin yellow 14 g
glucose syrup 110 g
lemon acid 5 g
boiling water 5 g
tonka beans

Cooking method

Tonka beans
Aromatic dipterix (lat. Dipteryx odorata) is a tree from the genus Dipteryx of the legume family, growing in the tropics of South America, especially in Bolivia, Brazil, Guyana, Peru and Venezuela.
Inside the fruit of the aromatic dipteryx there is one black wrinkled seed 3-4 cm long and 1 cm wide.These seeds have a pleasant aroma reminiscent of vanilla, almonds, cinnamon and cloves and are sold under the names tonka beans, coumaruna, sumbaru, sarrapia, tagua.
The frequent use of these beans in the manufacture of men's perfumes is due to the hypnotically erotic effect attributed to them. They are used to flavor pipe tobacco, and fresh shavings are used as incense.
In South America, they believe that the plant has magical and healing powers and talismans from it bring good luck, protect against diseases and fulfill wishes.
Because of their vanilla-like flavor, the beans and the coumarin they contain are used as a cheap substitute for real vanilla called Mexican Vanilla.
In very small quantities, tonka is added as a seasoning to desserts, the main component of which is often poppy or coconut; they are used to season muffins and pies. For cream or milk based desserts, the beans are brewed for about 10 minutes to give off their flavor, and they can be brewed up to 10 times. Thin is also added to rum.
Exists assumptionthat the tonka coumarin contained in beans is an oncogene, which causes a decrease in their consumption.
In 1981, in Germany, this plant was completely banned for use in the manufacture of food. Since 1991, this ban has been partially lifted, but the limitation on the maximum coumarin content in products, which is 2 mg per kg, remains.
Coumarin is also used in medicine, as it is an anticoagulant, but in large doses, this substance can cause death. It is also used as a cardiac stimulant, although it should be used with caution.

Angela, I made marmalade. The portion is large, I didn't fit everything into the frame, I also poured it into the mold. I love marmalade with different additives, I usually add espelet or vanilla pepper, I didn’t add tonka beans, although I really like them, here I grated the bean and added it to the puree.I dipped the squares from the frame and some of the round ones in sugar and some of the gummies dipped in Ruby chocolate.
