I like to cook soups in a ceramic pot - they taste different in it.
There was sorrel at home, and it would have disappeared a little more. I started cabbage soup, but no potatoes, but I was determined.
Chop the onion finely, I rubbed 3 mm with a burner at the exhibition. Then sauté the onion in ghee until golden brown. We send the onion to the pan. Top up with boiling water (ceramic saucepan, hot onions, cold water did not dare), put a large zhmenka of dried roots into the pan (I have purchased ones, including parsley, parsnips, celery), there are also 10 vegetables and herbs seasoning (including dried carrots, onions , bell pepper, greens), add rice, start meatballs and cook for 15-20 minutes. While the soup is boiling, wash the sorrel, cut off the petioles, cut it. At the end of cooking, add salt to the soup. Throw in the sorrel, dissolve the eggs, let it boil for 2-3 minutes. Serve with sour cream. Rice gave these cabbage soup a creamy and jelly structure. I like it.
