Marshmallow chocolate

Ingredients

cocoa powder is better alkalized 40 g
water for cocoa powder 80 g
instant gelatin 25 g
water for gelatin 100 g
Syrup
water 120 g
sugar 390 BC
glucose (invert) syrup 220 g
-------- ------
powdered sugar 50 g
cocoa powder 30 g
starch 30 g

Cooking method

  • Marshmallow chocolateSoak gelatin in cold boiled water. Let it swell. Melt in microwave pulses.
Marshmallow chocolateMix cocoa powder and water until smooth.
Marshmallow chocolatePut in microwave and warm up a little. I heated it with pulses at full power, first for 20 seconds, and then for 10. It should have a mass similar to melted chocolate. Transfer to a bowl and pour gelatin there.
Marshmallow chocolateIn a saucepan, combine sugar, syrup and water. Put on fire. Bring to a boil, stirring occasionally. As soon as the syrup reaches a temperature of 110 degrees, turn on the mixer and start mixing cocoa with gelatin at low speed.
Marshmallow chocolateBoil the syrup to a temperature of 121 degrees.
Marshmallow chocolateAs soon as the bubbles in the syrup begin to decrease, pour the syrup in a thin stream into the bowl. The syrup is poured in, add the mixer speed to the maximum.
Marshmallow chocolateWe continue to beat until the mass lightens and becomes thick.
Marshmallow chocolateGrease the rug with plenty of oil. We put the frame and pour out the marshmallows. We level. We leave for 6-24 hours.
Marshmallow chocolateWe mix the powdered sugar, cocoa powder and starch. Sprinkle generously with marshmallows. We release from the frame and rug, turn over and sprinkle again. We cut into any figures. Roll each figure in the mixture, shake off the excess.

Note

I got the recipe from CardamonClub.
Gorgeous, tasty, not to come off. Recommend!

Angela, well, as always, another masterpiece! Just super!
ang-kay
Elena, Thank you. Pleasantly
Tashenka
Now also chocolate ...
Angel, if I whipped a little white with a hand Brown, then I can probably beat this too? Or not to risk it? But you really want to ...
ang-kay
Natalia. This one takes longer to whip. Try it with short breaks for half a minute.
Tashenka
Oh, so dangerous ... My Brown got so hot while kneading! And maybe I'll take a chance. He is already hoo how many years. Will retire, then the time has come.
Marika33
Angela, never cease to amaze with recipes!
I'll bookmark them, grandchildren will come, I will pamper them!
ang-kay
Marina, Thank you. Pamper! Children screech from them. Why are there children, you can't tear me off myself.
Marika33
Angela, I lost so great weight for Fasting, I'm afraid to cook this for myself, I don't want to get better. Easter is over and I have to limit myself, although I don't recover in summer. The vegetable garden does not allow you to relax.
But before Lent she ate too much, baked goods and sweets. Dorval, they say, did not eat candy for 4 years.

Marina, she herself)

Thanks again!
I made this miracle! True, no chocolate.
And cooked without a thermometer, because I don't have them.
But the result is stunning: like an American store, in banks!

Didn't eat. But I think it's a compliment.

Instead of cocoa and water for it, I added 60 grams of dense apple jam (I myself cooked it in the oven from Granny Smith, the juice evaporated pretty much, and a fairly dense pectin jam was obtained).Dissolve the jam in hot gelatin, beat it a little in a food processor to get rid of the lumps. Everything, then everything is according to the recipe. The only thing, I'm afraid, is that I did not add the mass, since the combine of the old generation, low-power and low-volume - the mass tried to escape from the flask.

Yes, marshmallows in cans are just as sticky in consistency. But so poisonously flavored that tin. I tried raspberry - it's just rare. But it was the consistency that bribed me: spread it on hot toast and layer portioned biscuits - my favorite application.

Nastya, was there jam without sugar?

So our homemade one is better and tastier. And naturalness itself)

Nastya, was there jam without sugar?
For 1 kg of fresh apples, about 250-300 grams of sugar, I don't remember more precisely. But ready-made jam with a harmonious taste, light sweetness and pleasant sourness. This acidity as a result pleasantly sets off the sweetness of the finished marshmallow. Against the background of a large amount of sugar, it is not noticeable, but like salt in caramel, it makes the taste of the product more voluminous.

Yesterday I took out another strip of marshmallow from the container where I store it, cut it into 1 cm pieces, sprinkled it a little with powder and starch. This is how mini-marshmallows turned out to be thrown into coffee.

To reduce the sweetness, I plan to sprinkle some of the flour from apple skins with starch, since there is a sprinkle of sugar on my tongue. powdery - sweetish.

So marshmallow is American marshmallow
Venera007
Tricia, Nastyusha, can you tell us more about flour from apple skins? You do it yourself?
Tricia
Venera007, Tanya, yeah, dry the peel from home (I don't risk the store ones - all the apples in the stores are processed and the peel is already bitter!) apples and then grind them into flour in a coffee grinder. I love this flour! I have it in meat, in sauces, and in sweets! Basically I pour her fruit pastilles for my son, so that it is not too sweet.
Venera007
Tricia, I have one coffee grinder, used only for coffee. One more chtol to start on the farm ..
I tried to grind sugar into powder and a food processor grinder or blender .. it's not that. It comes out too big ...

Tanya, I have two on the farm for a long time!

Purchased for 700 rubles. for all sorts of points from different Internet shops. And then I miss! Since one is only for coffee, and the second is torn between "sweet" spices and fiber from herbs and peels, zest and between "salty" mixtures (powder from green onions, garlic, etc.) Now I am catching points and rubles for 500-600 I plan to buy a simple one only for apple peels. And I advise you to take a simple one, it's very convenient! But you can't do powdered sugar in them - it melts and the coffee grinders burn.

Here! Coffee with marshmallows, help yourself, friends!

Angela! Great all-round dessert came out! And in a feast, and in the world, and in good people! And in a sandwich maker, like filling between layers of bread or pita bread, and on top of hot toast, and wrap in a pancake, and unsweetened in coffee-cocoa, and just with tea.
Tashenka
Nastya, beauty! I also need to make small marshmallows so that the boys can be added to their coffee (our drink with chicory is called children's coffee) and cocoa. And then the last time in silicone molds (for technical reasons) had to be done. The elder ate instead of sweets, and the younger asked for the little ones.

This is a flight of fantasy. We used to gobble it up and by the evening we had nothing ... we love sweets. Although the pants don't fit anymore. It is easier for children in this regard))
