Flourless Curd Bread Bars (100% Bran)

Ingredients

pressed cottage cheese (not soft) 300 grams
eggs c-0 2 pieces
oat bran 60 grams
wheat or corn bran 30 grams
salt 3/4 teaspoon
baking powder 1 rounded teaspoon
seeds for sprinkling any optional

Cooking method

  • Grind cottage cheese with eggs.
  • Grind the bran mixture a little. No need for flour at all.
  • Add salt and baking powder.
  • Pour in parts into the curd-egg mass, stir well.
  • The dough is sticky.
  • Place either a silicone mat or baking paper on a baking sheet.
  • Grease hands with vegetable oil.
  • Make 2 bars.
  • Place on a baking sheet with a distance from each other.
  • Make deep oblique cuts on top.
  • Sprinkle seeds over the top if desired. I didn't.
  • Put in an oven preheated to 190 degrees.
  • Bake for about 45-50 minutes.
  • Then turn off the oven and leave for another 10-15 minutes.
