Borjomi pancakes (yeast-free, but lush)

Ingredients

Wheat flour of the highest grade 230 gr.
Kefir 150 ml.
Mineral water BORZHOMI 100 ml.
Egg 1 PC.
Salt 0.25 tsp
Sugar 2 tbsp. l.
Soda 0.5 tsp

Cooking method

  • 1. Beat the egg with a whisk with salt and sugar.
  • 2. Add soda.
  • 3. Pour in kefir and mineral water. Mix everything well.
  • 4. Introduce the sifted flour. The dough should turn out like thick sour cream. If it is thinner, add a little more flour (otherwise, the pancakes will settle a little when they cool).
  • 5. Fry over medium heat (so that they have time to fry inside, as they are very fluffy), with the lid open, in a large amount of vegetable oil (you can deep-fried) on both sides.
  • 6. Place on a paper towel or napkin to remove excess grease.
  • Cooking secrets

  • 1. I tried it with different mineral water, but Borjomi always provides excellent results! Do not replace with another. Borjomi should be FRESH, not exhausted. On the second day of using the mineral water, the result is not the same ... If you want a lot of pancakes, then do not make a lot of dough at once. Better, knead the dough twice, as the mineral water, I won't get tired of repeating, fizzles out.
  • 2. Kefir is better to use aged. Do not replace kefir with anything else, in this case I am not responsible for the final result.
  • 3. Put on a frying pan with a wooden spoon. It is more voluminous, the pancakes will turn out to be round :-)
  • 4. Oil is generous. The pancakes rise to the height to which the butter is poured :-) If deep-fried, they will look like donuts.
  • 5. They are very curvy! Do not fry over high heat, otherwise the middle will not have time to cook! Patience and you will be HAPPINESS !!!!
