Ingredients

Dough:
dry yeast 4 g
wheat flour of the highest grade 320 g
sesame flour 20 g
milk 190-210 g
salt 5 g
sugar 30 g
egg 40 g
butter 40 g
vegetable oil 20 g
sesame seeds 20 g

egg 20 g
water 5 g
sesame seeds 2 tsp

Cooking method

  • Sesame bagelsMix yeast with flour (leave 2 tablespoons of flour), pour in warm milk and an egg, add sugar. Knead the dough for 7-8 minutes. Leave for autolysis for 20 minutes.
  • Add vegetable oil, softened butter and the remaining flour. Resume mixing. Knead a soft, non-sticky dough.
  • 5-6 minutes before the end of the kneading, add salt and sesame seeds to the dough.

  • In the middle of fermentation, knead the dough.
