Pickled cabbage in Kremlin style

Ingredients

White cabbage 1 kg
carrot 2 pcs (200-300 g)
beet 2 pcs (200-300 g)
onion 1-2 pcs (100-150 g)
Marinade: per bucket 1.5L
water 3 cups (750 ml)
apple cider vinegar 6% 1/2 cup (125 ml)
vegetable oil 3/4 cup (200 ml)
salt 1 tbsp. l. (15-25 g)
sugar (to taste) 0-25 g (0-1 tbsp. L.)

Cooking method

  • We sterilize the jars.
  • We chop all vegetables with a knife or grate them. I took small bulbs. We put in jars, tightly, press with our hands, but do not ram.
  • Cooking the marinade: pour 3 cups of water into a saucepan, half a glass of vinegar, 3/4 cup of vegetable oil, add 1 tbsp. l salt, sugar to taste. I had to marinade 2 times for 1.2 kg of cabbage. Perhaps left too much free space in banks.
  • Boil the marinade and pour the hot marinade over the vegetables!
  • Cover with a lid, cool and put in the refrigerator.
  • You can eat the next day, but it's better to give her a couple of days!

I put a couple of cloves of garlic in one jar, it turned out to be a more spicy version, more like a snack. But the taste is a little harsh.

I have such a solution: I put all the filled jars in a row and pour in small portions (1 \ 4-1 \ 3 of the level in the jar) the marinade into each jar in turn, and so I go through them 3-4 times. But you need to know exactly how many cans the marinade is enough for. If there is not enough boiling water, you can add boiling water.
Turn a well-closed jar several times for 3-5 minutes on different sides.

I tried it with different oils, I report.
Unrefined gives a very strong taste and clogs the taste of onions and sourness, in my opinion it can only be combined with garlic and a lot of onions. I did not like.
On the contrary, grape seed oil gave a good result. The taste of butter is not felt, the taste of cabbage is bright.
