Cooking method

  • First, let's prepare the meat and onions:
  • Cut the meat into narrow strips across the fibers.
  • Peel and cut the onion with feathers, that is, in half rings along the onion (2 medium or 3 small), since if you cut across the onion, the onion may creep out during hot processing.
  • This recipe has two methods of preparation initially. I will describe both.
  • The first way, almost classic:
  • In a saucepan, fry the onion until a beautiful golden color, in the fried onion without turning off the heat, put the chopped beef and fry until tender, to seal the juice in the meat.
  • The second way I'm using:
  • Pour water into a saucepan, about 150 ml, boil and put the meat in boiling water, add the power of the plate to the maximum, mix the meat and cover, letting it simmer for a couple of minutes, to seal the meat again. This method is less effective at sealing the juice in meat, but I do not use vegetable oil. I do not like to combine vegetable and animal fats in one dish.
  • Then everything is the same. While the meat is stewing, prepare the rest of the products;
  • Peel and chop or grate carrots on a Berner (2 large or 3 medium). I had a sluggish carrot, the remnants of my own, so I chopped it with a knife as best I could;
  • We will wash the mushrooms, I had frozen boiled mushrooms, harvest already in 2016, but mushrooms are also possible. Honey mushrooms are small and I did not do anything with them, the mushrooms will have to be cut into strips comparable to carrots;
  • Let's prepare the cucumbers. In the fall I have prepared for such cases half-liter jars of canned cucumbers "ladies' fingers", that is, the cucumbers are canned already cut into strips. Or take 3 large or 4 medium pickles and cut into strips, again comparable to carrots;
  • Peel 2 large or 3 medium beets, and cut them into small strips, you can grate on a Berner on fine strips.
  • Add the remaining products to the stew in turn:
  • Put the carrots, mix and let the dish boil again;
  • Put the prepared mushrooms and cucumbers, mix and let it boil again;
  • Only now we will add the onion, if we did not fry it at the very beginning;
  • And finally, pour the beets into a boiling saucepan;
  • Mix everything well and leave to simmer for 15-20 minutes;
  • When all the ingredients are stewed until soft, add 1 hour. l. mixtures of pickled bitter peppers, such

    Those who do not have such a miracle can simply pepper with black pepper.
  • And finally, add sour cream, mix everything and let stew for another 5-10 minutes.
  • About salt. In general, I do not additionally salt such beef stroganoff, it contains canned or pickled cucumbers, this salt is enough for us in our family. But if you are not salty, then salt with pepper to your liking.

This unusual recipe for beef stroganoff was given to me by my college friend, and no matter how much I looked, I just didn't find it in the tyrnet. I have been making this recipe for 15 years, in principle, this is a full-fledged dish for dinner, which does not particularly require a side dish. But if you really really want to, then this beef stroganoff goes well with pasta.I would not make vegetable side dishes, because there are enough vegetables in the beef stroganoff itself.
Of course, you can use it as a side dish and cereals, for my taste it will go well with boiled buckwheat. All health!
