Lukerya bun

Ingredients

OPARA:
* Wheat starter 100% 50 g
* Wheat flour 50 g
* Water 50 ml.
DOUGH:
* Opara all
* Wheat flour 500 BC
* Milk 250 g
* Dried onions 30g.
* Egg white 1 PC.
* Sugar 2 tbsp. l.
* Salt 1 tsp
* Softened cream margarine (or butter sl.) 60 g
* Egg yolk 1 PC.

Cooking method

  • By the time of mixing, prepare the dough (fermentation until the first signs of subsidence, after active lifting)
  • Prepare products:
  • Remove the fat from the refrigerator to soften.
  • Sift the flour, heat the milk, beat the protein with a fork, heat the onion until it is medium-sized flakes.
  • Place all ingredients, except fat and yolk, in a kneading container. After 4-5 minutes of mixing add margarine (butter). The dough requires thorough kneading until the smoothness of the bun, which lags well behind the hands and dishes.
  • Place in a bowl (I grease it with the thinnest layer of vegetable oil) and place in heat for the main lift. When the dough has doubled, you can start forming the products.
  • Divide the bun into 10-12 pieces, roll them into neat, smooth balls.
  • Now roll each of them into a sausage about 15 cm long. Cut the "body" lengthwise without reaching the edge of 1.5-2 cm. Then twist the formed bundles together. Pinch off the edges (you can slightly tuck under the workpiece)
  • Place on a baking sheet covered with parchment.
  • Buns can also be shaped like for burgers, if you don't want unnecessary manipulations.
  • Put the baking sheet in heat (preferably in a polyethylene bag and close it tightly - in this case, a favorable environment is created inside, in terms of humidity, and the dough is more active).
  • Well, the products "fit". Brush them with loose yolk.
  • Preheat the oven to 180-185 * C. It will take 35-40 minutes. It also depends on the technical characteristics of your oven.

I baked in a silicone mold. And the batch was made in a bread maker.
