Canned salmon, quinoa and sweet potato cutlets

Ingredients

salmon (canned) 1 can
quinoa 150 g
sweet potato (mashed potatoes) 200 g
parsley (finely chopped)
cilantro (finely chopped)
green onions (or shallots)
lemon juice and zest 0.5 pcs
eggs 1 PC
salt taste
pepper taste
garlic 2 cloves

Cooking method

  • Make sweet potato puree. To do this, it can be baked in the oven or steamed.
  • Cook the quinoa according to the instructions. Cool down.
  • Drain the salmon jar. Mash the fish with a fork.
  • Chop the herbs finely.
  • In a bowl, combine fish, quinoa and sweet potato puree. Add salt, pepper, lemon juice and egg.
  • Make small cutlets from the minced meat, fry them on both sides in heated oil (you can bake in the oven).
  • Serve with salad, fresh vegetables or yogurt.
