  • The cooking process is simple.
  • First, knead the dough:
  • Margarine (butter) is ground with sugar until smooth. We introduce the egg. We quench the soda with citric acid and add to the margarine. If you want to use a flavoring essence, then add that too.
  • Add flour to the mixture. preferably all at once. Can be in two parts. Put vanillin in the flour right away, and if you use quick baking powder instead of soda, then use it. And quickly knead the dough. If the dough is kneaded for a long time, it will tighten and become tough. I recommend - tested by experience on all volumes of shortcrust pastry, kneaded by me by hand - knead with movements from bottom to top. That is, what we turn at the bottom upwards and so on in a circle until the flour combines with the rest of the mixture. Then you can mix a little as usual.
  • Food must be from the refrigerator. The margarine is cool, but plastic (remove from the refrigerator first). The dough temperature should be no higher than 17С. If the dough is warm, the margarine will soften greatly, this will reduce the plasticity of the dough, forming the products will be difficult and the products will be stiff. Therefore, if the dough is warmed up, put it in the refrigerator for 30-40 minutes, covering it with a film so that it does not wind up.
  • We form the tubes. The tubes themselves are formed very simply:
  • 1. Roll out a piece of dough into a round layer 2-3 mm thick. If you want a larger and softer tube - roll out the dough thicker, if you want a less voluminous and more crisp roll - roll it out thinner. Do not forget that this is a shortbread dough and can tear if very thin.
  • 2. Cut the circle into sectors.
  • 3. Put a piece of marmalade on the wide part. Do not forget that the dough is sweet and a large amount of marmalade will make the finished product sugary.
  • 4. Beginning with the wide end, roll up the tube.
