Ingredients

For 1 loaf:
White bread flour 3 cups
Whole wheat flour 3/4 cup
Buckwheat flour 3/4 cup
Water 2 cups
Salt 1 1/2 tsp
Syrup 2 tbsp. l.
Olive oil
or walnut oil
2 tbsp. l.
Dry yeast 1 1/2 tsp
Powdered milk 1 1/2 tbsp. l.
Walnuts 1/2 cup

Cooking method

  • cup 200 ml
  • Place the bread maker in the "bake with whole flour" setting, medium crust. Press the "Start" button. Add walnuts when the bread maker beeps after the first kneading
  • At the signal, in addition to nuts, I also added half a glass of slightly cooked buckwheat to the dough (in the half-cooked stage)

  • I didn’t have nut butter, I baked it on olive oil, and not in the shop, but homemade, which I took in an Arab village, delicious and aromatic. And buckwheat after the signal was half-baked. The bread turned out to be very soft, airy, rose well and baked.

210 ml. water
2 tsp molasses (I took honey)
1 1/2 tbsp. l. olive oil or walnut oil (I took the last one)
315 gr white bread flour
50 gr buckwheat flour
1 tbsp. l. milk powder
1 tsp salt
1/2 tsp Sahara
1 tsp dry yeast
40 grams of walnuts (I broke and put them in the dispenser).

I baked buckwheat bread, I liked it very much! The only thing was that I didn't have molasses, I added honey and the bread didn't rise very much. Probably honey inhibits yeast growth?

Molasses and honey are equally sweet, and this will not affect the taste and rise of the dough, and they will not suppress the yeast in any way. Check the quality of food, yeast and the quantity of food.

I am still a beginner in baking, I learned how to make the traditional white from a book for a bread maker and now I started trying other recipes.

This recipe had to add 1.5 tbsp. spoons of water, because the stove creaked terribly during kneading, I was afraid that it would fall apart now. I think half an art would be enough. spoons.
The roof is not that it would have completely sunk, but it did not rise as it would like and its appearance left much to be desired.
Everything is baked inside, the taste is wonderful. Thanks for the recipe.

I made a small bun. Didn't change anything in the recipe. The water is ok. The dough was kneaded quite tight, but rose very well. The bread is delicious But, for my taste, it is good as an independent dish, with butter, for example. If to other dishes, then I would not put nuts. But that's for my taste.
