Ground oatmeal (I have oatmeal) 30 g
Coconut flour 30 g
Almond flour 30 g
Eggs 2 pcs

Sweetener (I have grape pecmez) 30 g
Vanillin, cinnamon Taste

Cooking method

  • 1. Butcher the mango. Mashed 2/3 of the quantity with a blender.

  • 2. Just cut the remaining 1/3 of the fruit into small pieces.

  • I advise you not to lay out a workpiece of great height. Worse baked. Better lower.
  • 6. Bake at 200 g for about an hour (45-60 minutes). The cake should seal well but stay moist.
  • 7. We take out, cool in the form, lay out, decorate. I dusted with Sweet Powder (no sugar) and sprinkled with cranberries.

When I came across mangoes in the store for an action, I grabbed them, still, not really knowing how to eat them. The fact that they are very tasty and rare and exotic for us, of course, I know, but it just seemed to me too little to eat, I wanted to "attach" them somewhere else. I came across a cupcake recipe in which the author completely improvised in the recipe. So I decided! I took its principle as a basis, replaced (added) flour, added banana (due to lack of mango), cinnamon, the sweetener I have and ... baked this "miracle"!
The texture is more like a cake. Soft, moist and very aromatic! when mango pieces come across, a real gastronomic orgasm rolls over! (Excuse me! 🙏🏻 But there’s no other way!)
I understand that many, having seen this recipe, will make square eyes and decide that I am “completely moved by my mind”, since I post such a recipe. A MANGO cupcake? These are not apples, are they? Many not to taste, they have never seen a mango in their eyes! And then it's in the dough! You can go crazy! Agree. Of course you're right! I might have reacted this way too ...
But, it so happened that I had the opportunity to cook and taste this cake. And I decided to make this my wish come true! And I have no regrets!

Coconut flour gives the product a friability, almond flour gives a nutty note and a subtle bitterness, oatmeal - usefulness. About mango, generally keep quiet. Its taste and aroma are not lost even after long baking. Cinnamon and vanilla remind of the holiday. A good combination of ingredients and a predictably tasty result!
