Ingredients

OPARA:
* Starter 80 g
* Wheat flour 80 g
* Water 80 ml.
DOUGH:
* Opara whole (240 g.)

* Butter 60 g
* Milk 70 g
* Salt 1 tsp
* Vanillin option
FORMATION:
* Poppy seed or sesame seeds for sprinkling option

* Jam 6 tsp (two for 3 tiers)

Cooking method

  • In the evening, make a dough of equal parts flour, water and a starter (I have wheat whole grain)
  • In the morning, measure, weigh all the required ingredients.
  • Sift flour. Melt the butter. Heat the milk (I make it easier - I melt the butter in the microwave and so as not to wait until it cools down, I mix it with cold milk - it turns out a good temperature for sourdough and dough)
  • We start kneading without the butter-milk mixture, add it a little later, when the bulk of the products are mixed.
  • Knead until the dough begins to lag behind the hands and the walls of the dish.
  • Place the bowl in a warm place until the volume of the bun doubles. As soon as this moment has come, we proceed to the formation of the product.
  • To do this, we divide into 4 parts. Roll up and let it rest for 10 minutes (cover with foil)
  • Roll each ball into a circle. I roll out on a silicone mat with markings - my sheets turned out to be 25 cm in diameter.Place the first one on a baking sheet covered with baking paper (in my case, this is a siliconized non-stick mat) We coat with 2 tsp. jam. we put the second sheet on it. We repeat the operation. We do this with three sheets. The fourth is laid without smearing.
  • Place a glass or any other dish with a round bottom in the center of the resulting "puff". From the wall of the glass to the edge of the workpiece we make cuts, thereby dividing into 16 sectors.
  • Now we twist them in pairs in opposite, from each other, sides, twice, and pinch the outer edges, forming "petals" We got a beautiful flower with eight rays-petals.
  • We put in warm, for proofing. We cover with a film.
  • When the workpiece comes up, turn on the oven twice, setting it to 180 * C.
  • While it is warming up, grease the top of the roll with yolk (I add 1 teaspoon of water to it, so that it can be smeared easily without injuring the dough pattern).
  • If you like sweets with poppy seeds or sesame seeds - it's time to put them into action in our performance))
  • The baking time depends largely on the capabilities of the oven. My bun was baked for 40 minutes.
  • Cool as it is on a baking sheet.
