Ingredients

Proteins 2 pcs 70 g
Lemon acid 1/3 tsp
Sugar 450 g
Water (in syrup + in jelly) 130 + 100 g
Agar strength 900 10 g
Dry jelly 1 pack 40-48 g
Lemon juice optional 1 tbsp. l.
Vanillin on the tip of a knife

Cooking method

  • Jelly pour hot water 100g and stir well so that there are no lumps and that the gelatin is dispersed.
  • Beat the whites with citric acid until firm.

  • Simultaneously, cook the syrup (water, agar, sugar) and boil to a temperature of 110 degrees (about 4 minutes over medium heat, to the strings as for marshmallows). The syrup must be constantly mixed well so that the agar does not burn.
  • Once the syrup is ready and the whites are whipped, pour the syrup in a thin stream at a medium mixer speed.
  • When everything is poured in, we increase the speed almost to the maximum, let it mix for half a minute and pour in the jelly and lemon juice. And now the most interesting thing, we continue to beat at high speed for 4-5 minutes.
  • We transfer the "gelatin" into a pastry bag and place our "jelly" on parchment or film. Dust immediately with icing sugar. Ready "jellied" in 2 hours, glue the halves, and store in a tight container in the refrigerator. It can lie for a week, it will only be sugared on top.

I take Agar in a confectionery store, work with it and the result is stable. If you have agar from a supermarket, it must be mixed with water, heated, the agar should thicken almost immediately, this is how its performance is checked. If all is well, then pour in the sugar and cook the syrup.
With my agar, this is not required, and that's how it works. I read that Kotani agar because of maltodextrin in the composition should be taken 2 times more.
