Pumpkin soup with bacon and apple

Ingredients

Pumpkin (peeled) 1-1.2 kg
Carrot 2 pcs
Leek (stem) 10 cm
Garlic 2 teeth
Broth or water 500-750 ml
Butter for frying
Bacon 150 g
Apple 2 pcs
Salt and pepper and paprika mixture taste
Croutons and pumpkin seeds (optional) to serve

Cooking method

  • 1. Prepare vegetables. Clean and wash.
  • 2. Peel and seed the pumpkin. Cut the pumpkin into cubes or slices.
  • 3. Cut onions and carrots into slices. Chop the garlic arbitrarily.
  • 4. In a saucepan with a thick bottom, melt the butter (2-3 tablespoons) and fry the leeks, carrots and pumpkin over high heat, stirring constantly, for 5 minutes. Finally add the garlic and fry for another 1-2 minutes.
  • 5. Add hot water or broth (750 ml) to a saucepan and cook vegetables over medium heat until tender, 20 minutes. Season with salt and spices to taste.
  • 6. While vegetables are cooking, cut the bacon into slices and fry in a dry skillet until crispy. Place cooked bacon on a paper towel to get rid of excess fat.
  • 7. Peel and seed pods from apples. Cut into cubes 0.7-1 cm. Fry the apples in butter (1 tablespoon) until soft, season with a pinch of curry. To prevent the apples from turning into "porridge", choose apples of hard varieties, and not with loose pulp.
  • 8. Throw the cooked vegetables on a sieve, drain the broth, but do not pour it !!! Purée vegetables with a hand blender. By adding broth, bring the soup to the desired consistency and smoothness.
  • 9. Return the puree soup to the fire, warm up and adjust the taste for salt and spices.
  • 10. Pour hot pumpkin soup into bowls and serve with bacon chips and fried curry apples. You can also serve croutons and pumpkin seeds with the puree soup.
