Whole grain bagels with nuts and dark chocolate

Ingredients

whole wheat flour 180 grams
salt 1 gram
lemon acid 1 gram
soda 2 grams
any sugar substitute taste
water 95 ml
odorless vegetable oil 45 grams
For filling
bitter chocolate 40 grams
any nuts 30 grams
yolk for smearing the dough (I did not use)
vanillin optional

Cooking method

  • Mix flour with salt, sahzam, baking soda and citric acid. Add vanillin if you want.
  • Pour in water and oil, knead. Make a flat cake, cover with a towel and leave for 30 minutes.
  • Then roll it into a thin rectangular layer, lubricate the entire surface with vegetable oil. Fold both parts up with oil. Roll up into a tight roll, wrap with foil and put in the freezer for a day.
  • Take out the next day and thaw in the refrigerator.
  • For the filling, finely chop the chocolate and nuts.
  • Sprinkle the table with flour, roll the dough into a circle, 1 mm thick.
  • Depending on the desired end result, cut into segments, 8 or 12 pieces.
  • Put the filling in the wide part of the triangle, wrap the edges and shape the bagels.
  • Brush with whipped yolk.
  • Bake -
  • -in an oven preheated to 200 degrees for about 20-25 minutes
  • -in a cold pizza maker for 20-25 minutes, and hold for 10 minutes after turning off.
  • Cool slightly. You can sprinkle, like me, erythritol powder.

Wow! Great recipe! We must do it. Only not with chocolate (they don't like mine ... but I love it so very much!).
And can baking powder instead of soda and lemon?

Baking powder is not needed, it will freeze and will not give the dough lamination
The soda after shock therapy is not felt at all.
Instead of chocolate, you can add raisins to the nuts.
Or make with poppy seeds - sprinkle the whole piece of dough and roll
Then it is better to boil the poppy seeds and put them on a sieve.
