Sugar-free grape jam or thick pecmez

Ingredients

sweet grapes

Cooking method

  • Sugar-free grape jam or thick pecmez
  • Sugar-free grape jam or thick pecmezI made jam from two different grape varieties. From the usual "Lydia" and cultural - "Zagrava". For jam, it is better to take fleshy varieties, and for pastry they are juicy, with a low content of pulp.
  • Sugar-free grape jam or thick pecmez
  • Sugar-free grape jam or thick pecmezI cooked it in two ways. First. I just chopped the berries in a food processor and strained them through a sieve.
  • Sugar-free grape jam or thick pecmez
  • Sugar-free grape jam or thick pecmezSecond. She cut off the berries. Slightly suppressed. Put it on fire and boil it until soft. I kneaded it again.
  • Sugar-free grape jam or thick pecmezI passed it through a sieve.
  • Sugar-free grape jam or thick pecmez Further, the algorithm of actions is the same. She put the juice with pulp on a slow fire. It is desirable that the juice does not boil, but only "steamed". For the usual pecmez, it is advisable to remove the pulp to the maximum so that there is one juice.
  • Sugar-free grape jam or thick pecmez
  • Sugar-free grape jam or thick pecmezBoil the juice several times. The mass will become thick. Will stick to the back of the spoon. If you drop it with a mass, then it will not unfold.
  • For a standard pecmez, it is enough to boil the juice by 50-80%. It should turn into syrup and look like liquid honey.
  • Pour (transfer) jam or pecmez into dry clean jars and store in the refrigerator. For long-term storage, put the jam in sterile jars and roll up with sterile lids.
  • Delicious wintering!

Note

Sugar-free grape jam is pecmez, but thick. Pekmez is made from different fruits. I met a date, a plum from a carob. In Turkey, pekmez is considered a panacea for all diseases.
The process, of course, is long and for those who have their own grapes, which have nowhere to go. But this work is worth it. It is very tasty, aromatic and healthy. Recommend!

Bookmarked it.

Elena, I hope it will come in handy next year, if not already. Our neighbor still has a ton of simple grapes. He asks every day that we relieve him of him.
Silyavka
Angela, I have already run out of grapes, so until next year.

Angela, as always .. In our store, grapes are not very expensive and are sooo tasty! There is also Isabella, but I can’t stand her smell. I cooked grape-orange-ginger jam, but I didn’t risk it without sugar now, following your footsteps, I will definitely do it! Making jams in Kesh is a pleasure
Thank you!
Lerele
ang-kay, will you come to us again ??
I have neither grapes nor peppers, and in general I have already eaten everything up

I can imagine how delicious it is, I would not refuse such a panacea medicine either

will you come to us again ??
Lets do it! Invite and accept. And I'll bring you some more cherries in chocolate and everything you say)

Angela, where have you been with your recipe before? I had so much wine this year that I didn't know where to build it. She gave out a lot to her relatives, although she refused, but she directly imposed them on them. I made a lot of juice, and from the rest I put wine, now it’s just ripening. My grapes are black, like Moldova and Shevchenko. I don't like Isabella and Lydia, so I took them out of the site long ago.
Now I am writing and the idea comes to the head to try to cook your jam-pekmez from juice. Juice without sugar, but still very sweet. grapes received a lot of sunshine this year.
Now there is no time to boil it, I am preparing a vegetable garden for winter, but later I would not forget to try it!
Angela, can you boil in a multicooker? I boiled hot jam Tanya Admin in the cartoon, it turns out great
ang-kay
Nelya, can be made from juice. Initially, the juice is extracted.Only if it is without pulp or there is little of it, it will turn out exactly pecmez (grape syrup, syrup, grape honey, as it is called). It goes well in baked goods instead of molasses and as a sweetener.

After all, you can boil it in a multicooker?
Of course. It will be long, but it is possible. The main thing here is to take a larger evaporation area.

I don't like Isabella and Lydia,
I don't have these varieties either. Lydia is my neighbor.
Lerele
ang-kay, then so, for me this grape, then cherries, pepper do not forget a jar and I'll think about it
nila
Angela, the juice is pure, no pulp at all. I drove on a juicer, so it’s for sure that the pecmez will turn out, not jam. I have never tried pecmez, I have not even seen it on sale, but you can try to cook it yourself. Moreover, there is a lot of juice, and we cannot drink so much. And not only grape.

And in the cartoon I remove the valve and stew well, evaporate, and there is no need to stand in the way.

means so
Agreed. I don't need a visa, but an invitation with tickets is just right. Gee)
Quote: nila
it will definitely work out,
This is also very tasty.

I remove the valve in the cartoon
Well, after all, you can evaporate with the lid completely open? So?
nila
No, I tried. When the lid is ajar, I fixed it with a multi handle, then it boils strongly. But if the valve is removed, it does not boil. But I do not remove the valve for long, only at the end of evaporation. And most of the time is just on Extinguishing, it turns out normally.

Angela, and how do you feel about Peter, otherwise I'm next in line for you

I went shopping today. We have a network "Alley \ Commander" in Krasnoyarsk. So, they sell discounted fruits / vegetables there. I bought black grapes (different varieties) for 30 rubles. per kg. I got 1.5 kg. Sorry. Tomorrow I'll go for more grapes. I'm going to cook Pekmez.

I cooked grape-orange-ginger jam
Olya, you can have a recipe. Please share the link. I didn't find something like that.

It’s in my head I cooked it all right ... I just boiled the grapes a little (in Kenwood), rubbed it through a sieve, added orange juice and zest, sugar and cooked until thickened, constantly stirring.

I'm lucky ... come! Although my apartment is not very large, guests are ALWAYS welcome 🥂
Taia
Angela, thanks for the recipe.
Please tell me what is the final taste? Looks like classic jams to drink with tea? Or is it more likely to be used as a sauce for something edible? With what and where to use it? For example, Admin has a chili jam - it's a snack bar (I love it). But I haven't tried pecmez, I don't know its taste.
ang-kay
Taya, sweet jam. Like a sweetener on a bun. Can be used with pancakes and baked goods instead of molasses.
