Ingredients

dough for dumplings 100 g
minced beef (mutton) with fat tail 35-40 g.
strong chicken broth
dry mint
salt taste
ground black pepper taste
saffron
wine vinegar taste

Cooking method

  • DushbaraFrom water, flour and eggs, adding salt, knead a hard dough. Let it rest for 10-15 minutes.
  • DushbaraPass the beef or lamb through a meat grinder, adding fat tail, onion. Season with salt and pepper. Pour in some cold water or broth, stir.
  • DushbaraRoll out the dough into a very thin layer. Cut into squares with a side of 1-2 centimeters.
  • DushbaraDivide the minced meat into squares.
  • DushbaraConnect two opposite corners to make a triangle.

  • Dushbara Pour boiling water over saffron and leave to brew. Bring strong chicken stock to a boil. Add saffron infusion to it.
  • DushbaraShake the flour off the dushbar by placing it in a sieve.
  • DushbaraCook in broth until tender (about 1-2 minutes after boiling).
  • Serve with broth, sprinkle with dry mint. Add vinegar to taste.
