Candied apples and pears (lazy option)

Ingredients

Apples 3 Kg
Pears 3.7 kg
Sugar 3 Kg
Lemon acid 3 tsp
powdered sugar 200 g

Cooking method

  • I cut the fruit on a cube cutter to KM Kenwood (preferably larger), sprinkled it with sugar and left it for 12 hours (overnight) for the fruit to give juice. In the morning I brought it to a boil, added citric acid (try it, the amount depends on the apples) and set it aside until evening. Fruit pieces have become transparent (glassy). I repeated the procedure 2 more times (in the morning and again in the evening). I cooled it down, took the fruit out of the syrup, poured it into a colander and left it overnight to drain the syrup. In the morning I put the fruits on Travolka trays, turned on 50 * and dried until tender. Sprinkled with powdered sugar. All!!! Very easy, lazy, simple and very tasty. They are eaten like seeds.

Note

You can get different colors by adding cherry, raspberry or strawberry syrup or other fruits to the syrup when boiling. It will also be beautiful.
This volume of 6.7-7 kg fruit just fits on 9 Travolka pallets.
Output of finished products, candied fruits 3 kg.

Lyi, thanks for the recipe! In what packaging and at what temperature do you store ready-made candied fruits?

Corsica, ordinary 3-liter cans for rolling with iron lids and at home in the pantry. Our food moth is malignant, it starts even under plastic covers.
Now I put them in the Status containers and in the kitchen on top of the kitchen cabinets, I'll try it because I think the candied fruits will be eaten very quickly.

Lyi, OK, thanks!

do you need to clean?

What wonderful candied fruits!
Lyi, thanks for the recipe advice!
Please tell me how much time should you dry?
I just got a dryer not so long ago, but I haven't learned to use it sensibly yet.

Iri55, removed the seed boxes, and sometimes only picked out the seeds and that's it. Neither apples nor pears peeled the peel, although the peel of the pears was very plump, the autumn pears, still unripe, were beaten by the wind.
Nothing is felt in candied fruits.

Rituslya, it all depends on what kind of dryer you have, as well as the thickness of the layer of scattered fruits on the pallet in the dryer. If strictly in one layer, somewhere about 10 hours, if you fall asleep as I am on the pallet, as much as fit, then from 20 to 30 hours. Just drop in the dryer and watch. You can take a break, then be sure to open the dryer door, it will cool down, if necessary, turn it on again.
Good luck. It's so easy to do, and on the market these candied fruits are so expensive even in our South.

I'm afraid all the time to underdry

Iri55, they will be a little "rubbery", when pressed, moisture is not felt. "Pebbles" should not be dry. I don't know how else to explain.
When in doubt, turn off the dryer, let it cool down and try again. Not dry, turn the dryer back on. It is better to underdry candied fruits than overdry them.

Thanks for the recipe. I'll do it for the next year. The apples are already over
