Pie Fruit under the covers

Ingredients

Dough:
Flour / s 200 gr.
Sugar 60 gr.
Baking powder 1 tsp
Egg yolks 3 pcs.
Butter 100 g
Sour cream 2 tbsp. l.
Vanilla sugar 1 tsp
Blanket:
Egg whites 3 pcs.
Sugar 100 g
Starch 1 tsp
Fruit filling:
Pears 2-3 pcs.
Plum 6-8 pcs.
Brown sugar 2 tbsp. l.

Cooking method

  • Pie Fruit under the coversSift flour with baking powder, add sugar and vanilla sugar, mix everything.
  • Pie Fruit under the coversAdd butter, chop it or grind it with flour until crumbled.
  • Pie Fruit under the coversAdd egg yolks, sour cream and quickly knead the dough.
  • Pie Fruit under the coversPut the dough in a bag and put in the refrigerator for 30 minutes.
  • Pie Fruit under the coversTake the mold, mine is 23x23 cm, because my silicone mold is not lined or greased with anything.
  • Take the dough out of the refrigerator and distribute it in the form, as it is more convenient for you, I distribute it with my fingers from the center to the edges of the form. If the dough sticks to the finger, lightly grease them with vegetable oil. Chop the dough with a fork and place the mold in an oven preheated to 180 degrees.
  • Pie Fruit under the coversBake the cake for 20 minutes until browned.
  • Pie Fruit under the coversWhile the cake is baking, prepare the fruit.
  • I like a lot of toppings, so I use my fruit as much as possible. If the pears have a hard peel, then peel it, remove the seeds from the plums. Cut the fruit into small pieces; if the pear is very ripe, then it is better to make the pieces large.
  • Pie Fruit under the coversSprinkle the fruits with sugar and mix well.
  • Pie Fruit under the coversBegin whipping the whites only after you have taken the cake out of the oven to allow it to cool slightly.
  • Beat egg whites with sugar until dense foam. Add starch to the proteins and mix gently.
  • Pie Fruit under the coversStart assembling the cake.
  • Put the fruit together with the resulting syrup on the cake in an even layer.
  • Pie Fruit under the covers
  • Pie Fruit under the coversPut the whipped egg whites on top of the fruits and smooth them out.
  • Pie Fruit under the coversReturn the pie pan back to the oven and continue to bake for 30-40 minutes at 180 degrees.
  • Pie Fruit under the coversThe taste of the pie is very balanced and delicate: the practically non-sweet base is saturated with juicy fruit filling, covered with an airy foam on top, like a blanket.
  • Pie Fruit under the covers

Note

We really like it when the white blanket is thick, so I take 1-2 or even 3 more proteins than is required by the recipe. I use whites from the freezer, after thawing them, which accumulate when I use only yolks to grease pies.
Sometimes I add peach to pears and plums.

Tanyusha! Great recipe: girl_claping: especially for autumn when there is a lot of fruit! I really love all baked goods with such a "blanket"! Thanks for the detailed recipe .. just tell me, how did you align the proteins?
Tatyana1103
Olga, I level the proteins with a silicone spatula

Tanya, oleo-leo-leo-ooo !!!
This is all I go and bother.
I really like your recipes. True. Available and understandable, there is nothing tricky.
I’m not just wandering about recipes, I’m still documenting everything.
Thank you, Tanechka!
Cool, of course, the protein cap has risen! Blanket so blanket!

Tanechka, thanks for the recipe - it turned out to be a divine pie (however, I took only apples peeled with slices, since they were piled up).

Nikka, since you liked apples, then you will like it all the more with plums and pears, since the pear gives even more juiciness, and the plum gives a slight sourness, which sets off the sweetness of pears, on occasion, try this
I have heard a lot about Chuvash apples, how good they are.

For several years she worked under the command of a native Chuvash man, the smartest person

Yeah, Tatyana, I will try with pears and plums, because I made a double portion (2 forms) and already the whole form and part of the second - no))) Apples in our country house are varietal, with them the pies are super to taste. Thanks again.
Tatyana1103
Nikka, thank you for writing, maybe someone wants to cook with apples just like you

Tatyana1103, Tatyana, The pie is interesting!
Baked with apples and plums. Tasty, unusual!
I'm thinking of changing the fillings for the pie.
