Seasonal Vegetable Cream Soup

Ingredients

water 1.5-1.8 l
potatoes 5-7 pcs.
carrot 1 PC.
squash 1/2 pcs.
small oat flakes (instant (5-10 minutes)) 2-3 st. l.
salt taste
For filing:
sour cream taste
radishes and fresh herbs taste

Cooking method

  • Rinse vegetables and herbs under running water, peel and cut into slices.
  • Pour water into a saucepan, put on fire and bring to a boil. Add chopped vegetables, remove foam, cover and simmer over low heat for 15 minutes.
  • Pour about 1-2 cups of vegetable broth from a saucepan into a separate bowl. Then add oatmeal, salt to the pan and cook until tender. Remove the pan from heat and chop the vegetables in the broth with a potato grinder, adding 1-2 cups of vegetable broth if necessary. Return the pot to the heat, turn the heat down to less than medium heat, and with regular stirring, bring the soup to a boil and turn off the stove.
  • Serve with sour cream, chopped radish and chopped fresh herbs.
  • * For a smoother and more uniform soup, change the order of adding oatmeal - adding them after chopping vegetables with a blender, and increasing the cooking time. At the same time, make the consistency of the soup less thick than you plan, since the oatmeal will take up some of the liquid during cooking.
