Soft coconut ice cream with kiwi

Ingredients

coconut milk (or cream) 1 tbsp.
kiwi 2 pcs.
maple syrup 1 tbsp. l.
matcha tea 1 tsp
coconut flakes (optional) 1-2 tsp

Cooking method

  • Place the coconut milk in the refrigerator overnight.
  • Beat the cooled milk with a mixer on high speed until soft peaks (about 4 minutes).
  • Peel and chop the kiwi in a blender until puree. Rub through a sieve to loosen the seeds.
  • Combine with coconut milk, add maple syrup, coconut flakes (optional) and matcha tea, beat mixture on medium speed.
  • Refrigerate for at least 2-3 hours. During this time, mix several times. Remove 15 minutes before serving. You can freeze the mixture in an ice cream maker according to the instructions.

Kiwi does not go well with dairy and curd products. The enzyme in kiwi promotes accelerated breakdown of milk protein, which makes milk and dairy products taste bitter.
