What can I say, both options are excellent, and the taste is very different from each other, although I added pepper to the Tumanchik recipe and the breasts turned out to be quite spicy. But at the same time, both options are completely different in taste and, I would say, set off each other. I like to eat them at the same time, that is, a piece of one then a piece of another.
But in both cases I cooked both options for 1.5 hours at 65 *, then 8 hours at 35 *, kept in the marinade for 1.5 days, did not use nitrite .. It turns out that it is RAW-dried breasts. Transparent on the cut, juicy, mmm ... I recommend trying this particular drying option too. This is all that is left of 2 kg.
