Pickled daikon

Ingredients

Daikon 1 kg
Marinade salt (+ for pretreatment) 1 + 2/3 tsp
Table vinegar 9% diluted with water in a ratio of 1: 2 ** 4-5 st. l.
Water 660 g
Sugar 200 g
Ground turmeric *** 1 + 2/3 tsp

Cooking method

  • Add 1 tsp to the water. salt and sugar, bring to a boil, add turmeric, stir, turn off the stove, cover the pan with a lid and leave for a while.
  • Peel the daikon and cut one part into strips of "spaghetti", cut the second part lengthwise and cut into triangles, if the radish is small, cut into circles. Place the chopped daikon in a bowl, season with the remaining salt and leave for 2-3 hours.
  • Add the prepared marinade to the daikon - pour gently, leaving a sediment from ground turmeric at the bottom of the pan, or pre-filter the marinade through a napkin, then add table vinegar. Place the lid on the bowl and refrigerate for 24 hours. Serve without marinade.
  • * The juice formed during the pre-processing of the daikon can be left or drained, if desired, I drain the juice before adding the marinade.
  • ** The original recipe recommends using 1/3 tbsp of apple cider vinegar. for 400 ml of water and an increase in the amount of sugar - 150 g for 600 g of daikon.
  • *** The original recipe recommends gardenia fruits in the amount of 8 g per 400 ml of water.
