Rice noodle salad with vegetables

Ingredients

Rice noodles 1 roll
Fresh cucumber 1 PC.
Bell peppers 1/2 pcs.
Table vinegar 2.5-3% 2-3 dessert. l.
Garlic (slices) 1 PC.
Salt taste
Ground black pepper or pepper mixture taste
Vegetable oil 2-3 st. l.

Cooking method

  • Boil rice noodles according to package directions. Throw in a colander, rinse with cold boiled water and put on a plate.
  • Cut the cucumber and bell pepper into cubes or thin strips, remove the seeds, salt and pour over with a bite. Leave to marinate for 5-7 minutes.
  • Peel the garlic, cut lengthwise and core (not needed), chop.
  • Put the rice noodles in a bowl (not made of plastic!), Top with the vegetables squeezed from the marinade and chopped garlic.
  • Heat the vegetable oil in a small frying pan, add black pepper or seasoning, keep heating for another 5 seconds and pour over the prepared ingredients immediately (the oil will gurgle a little). Mix everything quickly and thoroughly with a fork, cover and leave at room temperature until cool, then put in the refrigerator. Serve chilled.
  • * For a more substantial flavor, add chopped roast meat or chopped boiled squid.
