Linguini with celery root in rosemary cream

Ingredients

Celery root 600 g
Dry white wine 100 ml
Bulb onions 1 PC.
Butter 1 tbsp. l.
Cream (see note) 200 g
Ground dry rosemary 2-3 tsp
Fresh rosemary (if available) 1 branch
Salt, pepper, nutmeg taste

Cooking method

Note

In the original recipe ( 🔗) Celery root is cut into thin slices and boiled in salted water. Less cream is used and the sauce is boiled down. In the case of a steamed vegetable, I had to add cream at my discretion (the recipe indicates the amount used) and I did not boil the sauce. I used 20% cream, but I think 10% would be better.
Rosemary I had freshly dried freshly ground, so with the recommended 3 tsp. it turned out very rosemary. We would have had enough and 2 tsp. Therefore, be guided by your taste.

The point is probably in celery and its aroma and aroma. I usually dilute either with zucchini or, if someone likes, sour - an apple, for example. And here the zucchini would go, and the cucumber, and the asparagus - the leaves of the snow-spinach-petiole young fireweed. Or just iceberg lettuce on top, frillis - juicy and crunchy, but without a bright taste.
Although, rosemary is also very fragrant ... But my husband loves him and any quantity is good for him.
