Cooking method

  • Dear Zachary suggests drying strawberry sepals. I went the other way. And I never regretted it.
  • The tea preparation scheme is as follows.
  • When picking strawberries, do not throw out the sepals. Wash them, dry them from moisture and poison them in the freezer. Without pre-withering.
  • We add the next batch of "tails" to the first. And so all summer.
  • By the fall, we have accumulated a certain amount of frozen raw materials. And then we start making tea. According to the method of Master Zachariah.
  • We take out the coveted package from the freezer and defrost the raw materials. We keep it in a closed bag in a warm kitchen for 12-18 hours (daylight hours). We send it to the freezer again. The next evening (or every other day, or a week later - it doesn't matter, but just in the evening) we take out the raw materials from the freezer and, after defrosting, we stand for about 12 hours more.
  • Then we ferment in a warm room (I fermented for about 6 hours).
  • Dry. I dried in the oven at a temperature of approx. 75 degrees, dried "until rustling" in an electric dryer.
  • We send it to a container for residual dry fermentation. After a week or two (or better after 8-10) you can drink.
  • The tea is delicious. The smell is bright, sweet-sour, with a pronounced note of dried fruits and a slight tart trail. It smells of ripe summer, fruits and bees. Rich flavor. The taste is also very rich, with a pronounced sourness and the same tart aftertaste note. The color is golden, not dark. Although for color, you can try to "burn" the tea when drying. I didn't risk it the first time.
  • The only drawback of this tea is that it tastes too fruity. I could not drink it mono. And in mixes with purchased black and its own Koporsky it sounds very soulful.
  • For fans of bright teas, I highly recommend trying it.
