Polaris PBM 1501D. Sourdough wheat bread (French mode)

Ingredients

ripe sourdough 300 g
wheat flour 175 g
water 80 g
salt 1 tsp
vegetable oil 1 tbsp. l.

Cooking method

  • I get the sourdough for this bread from 50 grams of wheat whole grain starter, adding 125-130 g each of water and premium wheat flour. In the warmth, the rise takes about 2-3 hours, in the refrigerator - about 12-14 hours.
  • The ingredients are given for one small bucket... She baked one such loaf, but did not install the second bucket in the bread machine.

  • - Place the spatula in the bucket
  • - Stir the leaven well with water, pour into a bucket
  • - Add vegetable oil, flour, salt on top of the starter culture. Measure tea and tablespoons using a cotton gauge
  • - Install the bucket in x / p. Select program 2 - French bread. Loaf weight - 750 gr. Crust color - optional (in the photo - "dark" crust)
  • - Cool the finished bread a little, shake it out of the mold, remove the spatula - and enjoy the taste

The dish is designed for

1 loaf 500 g

Time for preparing:

4 hours

Cooking program:

2 French

Note

A very simple recipe that does not require x / p programming.
Alternatively, you can take a strong rye sourdough as a starter - then the bread will turn out a little darker. Alternatively, use a wheat leaven without whole grain flour.

I haven’t tried to bake this bread in two buckets at once (I’ll try and unsubscribe), but it’s immediately clear that the size of the loaf should be set to the maximum, and at the end of the process, check the readiness - it may take 5-10 minutes of baking (program 13 Baking).
