Easter orange cake

Ingredients

orange 3 pcs.
almond 250 g
granulated sugar 200 g
eggs 4 things.
baking powder 1 tsp
salt pinch
apricot jam 3-5 tsp
orange liqueur Grand Marnier 20 ml

Cooking method

  • The cake according to this recipe turns out to be very tasty, fragrant with a long orange aftertaste.
  • To prepare it, wash the oranges thoroughly with a brush, place in a saucepan, cover with cold water and cook for 35-40 minutes.
  • Take out the finished oranges, cool, cut into slices, remove the seeds and grind (together with the peel) in a blender until smooth.
  • Lightly fry the almonds, grind in a blender with salt and half the sugar into coarse crumbs.
  • Mix the nuts with the orange paste.
  • Separate the whites from the yolks. Grind the yolks with the remaining half of the sugar and add to the mass of oranges and nuts, mix well.
  • Beat the whites until firm peaks and gently add into the dough, kneading them with a spoon from bottom to top. The mass will become light and airy.
  • At the end, gently add baking powder.
  • Put the dough into the prepared form.
  • Bake for 45 minutes in a preheated oven at 180 ° C. Then turn off the oven and leave the cake in it for another 10 minutes.
  • Cool the finished cake in the form, and then remove it and put it on a plate.
  • Smear the top and sides of the cake with jam heated with liqueur. Leave the cake to soak for 20-30 minutes.
  • Decorate the cake as you like: candied fruits, pastry sprinkles, etc.

Galaoh what a tempting recipe! Yes, and with such a history. This must be done!

Ikravery decent cake I highly recommend.

Gala, but what do you think, if I substitute orange for lemon, and almonds for walnuts, will anything work out?
Gala
Svetlana, I would not make such a replacement. Unlike oranges, lemons are very sour, which means they need a lot of sugar, and their aroma is not the same. And walnuts are very fatty. Almond flour is very often used in baking, but walnut flour ...
Erhan
Gala, Galina, thanks for the answer. I just have a lot of my lemons now, I don't know where to attach them. And walnuts from the mother-in-law are also abundant, in contrast to expensive almonds.
Helen
Gala, what is the diameter of the form you need!

I think it's very tasty!

HelenI think 22-24 cm is fine for this quantity. I have a shape of 19 cm, I counted the recipe for 2 oranges.

perfectly stored in a container in the refrigerator for several days, while the taste does not suffer.
Helen
I cooked oranges ... that's all for today ...

Gala, I made a cake.
But if something went wrong, if it's just not our taste.
After looking at the recipe, I decided that it can be baked in MV
As a result, it spent 2 hours on it, and the top remained as liquid as it was. And it was already 2 o'clock in the morning. In the morning I kept it in the oven for another hour. And as a result, a viscous mass, similar to yesterday's porridge.
And sooooo orange. In the morning I ate a piece, I remembered it until the evening.
It's a pity for almonds, but oranges, as in that joke about pineapple juice)))
I will not repeat.
Helen
So I, too, doubt about oranges, they are different (weight) ... but I will bake all the same ... and there would be a photo of the consistency of the dough ...

dana77, here was the first mistake. Not all baked goods turn out well in a multicooker, and even more so this is already quite wet. In the oven, it is evenly baked on all sides, and the excess moisture is partially removed.

And sooooo orange.
At the beginning of the recipe, I wrote

I recommend and always do test baking for the first time myself, reducing the ingredients in half.

Helen, I took small oranges. If you decide to bake, beat both yolks and whites very well. Unfortunately, for now, due to an injury to my right hand, I cannot take step-by-step photos, take a look at the website where I got the recipe, everything is clear here

Helen, Gala, girls, dear, answer - how can you determine the readiness of this cake, my oven is nimble, I'm afraid it will turn brown before it is baked with a splinter poked, it is dry

In short, he blushed me cool

the next stage is "burned out

in 25 minutes, turned off the oven, set it to cool, baked in the Nordic form "Heart".

I continue reporting
It was not possible to get it out of the mold without damage, it was hot, it collapsed when taken out, the stove must be in a detachable form, unambiguously: girl_cleanglasses: or in soft silicone, like Helen's.

For me there is a lot of sugar, the girls from the link that Galya gave were baked with a significant decrease

And the most important thing is it is very, very, very tasty
Checkmark, thanks a lot for this recipe.

I also thought about such a replacement, it will turn out to be almost a diet cake. Can you beat the yolks without sugar until they are light? Here it is important that the dough is fluffy and light.
Helen, if you do it with sakhzam, do not consider it as work, share the result. XB!

Probably not going to work. You need to add xanathan gum, as in Anna's recipe

You can beat it, but when baked without xanthan (in the absence of sugar) it will turn into a pancake. I add xanthan in many recipes to beaten eggs without sugar (with stevioside). By the way, here psyllium will not be superfluous to pair with almond flour.

Girls, try it with sugar, it is no coincidence that it has survived for centuries and has become a "not forgotten recipe".
Who knows if your stevia will be remembered through the ages.

According to some experts, the sweet taste of stevia, which contains virtually no carbohydrates, leads to adverse biochemical reactions. When our body tastes sweet in our mouth, it expects a supply of carbohydrates. However, stevia does not provide our body with carbohydrates. This causes hypoglycemia, a decrease in blood sugar in the body.

Anna1957
selenа, the girls ask about the possibility of a dietary option - why bring the dubious value of the information of unknown experts carrying an outright blizzard. They will figure it out themselves - to make with sugar or with stevia. And stevia has been used by the Indians of South America for centuries, and the Japanese have been on an industrial scale since the 50s of the last century.

Stevia served the Guarani Indians not only as a natural sweetener for drinks, but also as a powerful natural elixir. They also appreciated the amazing sweetness contained in the leaves of an amazing herb, and the healing properties inherent in the plant. ... Previously, there were two more similar species, but, unfortunately, they have long disappeared. Wild stevia, of course, is clearly not enough to meet the increasing human needs. ... In Japan, stevia is held in high esteem. This plant has made a real "green revolution" in the Land of the Rising Sun. Back in 1954, the Japanese began growing the South American miracle in greenhouses.
