The fondant could have been made from aquafaba with gelatin or psyllium, but my main interest was the dough. And in my pre-dietetic life I never liked this sweet fondant on cakes and buns, I always picked it off.

It was based on the ang-kai recipe "Easter cake for the lazy". I used, as usual, ingredients that increase the GI of the dish to a minimum (1st grade flour, not premium flour, psyllium, chickpea flour, stevioside instead of sugar, xanthan, vegetable rapeseed oil, chopped prunes instead of raisins).

The main thing here is to understand how much wheat flour can be replaced with chickpea flour without significant loss in taste. A lot has been written, but the algorithm is usual: dough, then eggs with butter are added (rise), and then another portion of flour (this is unusual - chickpea is added) - and another rise. And then - into the forms. Maybe you can shorten the whole process - you have to try.
