Ingredients

Peeled almonds 1 st
Natural yogurt (if not, you can also water) 125 ml
Olive oil 1 tbsp. l
Lemon juice 1 tsp
Pepper mix 1 tsp

Cooking method

  • Prepare almonds in advance, it must be peeled from the brown skin. To do this, put the almonds in a small bowl and fill with salted boiling water. Hold for 5 minutes and taking out one nut at a time, we begin to peel.
  • 1. Pour peeled almonds with warm water and leave for 10-12 hours to swell.
  • 2. After that, drain the water, pour the almonds with yogurt, add salt and punch with a blender until smooth

  • Put in a colander, put the load on top and put it in the refrigerator for 12 hours

  • Form a "head" from the mass. Wrap it again in cheesecloth, tightening it tighter (so that the cheese retains its shape) and put it in the refrigerator for a day, but without load.

  • The cooking process is not quick, but all this is done in between times and does not take much time.

Note

A very tender and soft cheese (reminiscent of feta in consistency), with an interesting taste and a spicy note. For a more neutral flavor, cashews can be used.
Perfect as a snack. And you can experiment with flavoring by adding herbs or seasonings to taste.
