Ingredients

Beef 300-400 g
Smoked bacon 150 g
Garlic 2 heads
Potatoes 4-5 pcs.
Bulb onions 1 PC.
Carrot 1 PC.
Egg 2 pcs.
Rye bread 250-300 gr.
Salt taste
Bay leaf optional

Cooking method

  • Garlic with smoked meatCook beef broth. When it is half done add carrots, onions, bay leaves and salt.
  • This soup is cooked without boiling. He literally barely breathes, melts, as my grandmother used to say.
  • As soon as the meat is cooked, remove all the ingredients from the broth.
  • Garlic with smoked meatDry the croutons in the oven. No oil.
  • I cut some of the croutons into cubes and wrap them with bacon. This is my addition. This was not in the original recipe. So you don't have to.
  • Garlic with smoked meatWe take medium garlic. We clean.
  • Garlic with smoked meatCut a third of the garlic into slices, finely chop two-thirds.
  • Garlic with smoked meatCut the potatoes into small cubes. We throw it into the broth. And also 1/3 of finely chopped garlic.
  • Garlic with smoked meatAfter 5 minutes, fry the finely chopped smoked meats, do not overdry. At the very end, add garlic slices to the bacon. He should literally grab, but not redden. Add the roast to the soup.
  • After a while, put the meat, cut into small pieces, and the remaining garlic into the soup. We bring the soup to readiness.

When my friend went to the Czech Republic, she literally fell in love with this soup. She said she ordered it everywhere. And if the taste was new, then she asked for the recipe. Fortunately, I went to visit a former classmate who knows the language.
A friend's husband began to grumble how much garlic you can eat. But his suffering did not end there.
A friend came home and began to cook these soups at home. Probably for a month we cooked and tasted various garlic with her. As a result, each got accustomed to its own favorite option.

My husband likes the soup according to the above recipe. Delicious, rich because of smoked meats, even brutal somewhere.

I love another garlic: the broth is boiled in vegetables. I put in carrots, celery, a bunch of tied greens, potatoes, and finely chopped garlic. As soon as the broth is cooked, I take out all the vegetables except the garlic. I put them aside. I pour out part of the broth. In the rest, I brew the eggs. I send potatoes and broth with eggs to a blender. Then I heat everything up, pour in the remaining broth and cream. I bring the degrees to 60-70. I pour it into plates. I add literally a drop of very finely ground black pepper and crackers. Enjoy !!! The soup tastes surprisingly silky, slightly piquant.
And by the way, my favorite version of garlic is the most beautiful.

One question. In the second version of the soup, what to do with vegetables (except for potatoes and garlic) after cooking? They are thrown away or somehow used further, something I did not quite understand this moment.

In theory, they are thrown away. But I put everything except greens (in my favorite recipe) into some salad. Little bonus.
