Tart with coffee ganache and prunes

Ingredients

butter 100 g
flour 200 g
powdered sugar 100 g
cocoa 1 tsp
yolk 1 PC
rum (I have amaretto liqueur) 1 tbsp
For the filling: prunes 250 g
amaretto 3 tbsp
Ganache: chocolate 220 g
cream 33% 220 ml
espresso 1 small cup
butter 50 g
amaretto 1 tbsp. l

Cooking method

  • Recipe from the book by Irina Chadeeva "Pirogology"
  • Awesome, chocolatey, delicious!
  • 1. Soak prunes in amaretto for 3-4 hours. Warm up in microwave for 30-40 seconds and cool
  • 2. Make shortbread dough from: soft butter, powder, cocoa. Add yolk, rum, mix. Pour in flour, knead the dough and put in the refrigerator for 1 hour
  • 3. Take out, roll out the dough, put in a mold so that there are high sides, prick the dough with a fork, cover with baking paper and add rice or beans, bake for 15 minutes with a load, then remove the load and bake for another 15 minutes. The base is ready
  • 4. Put the prunes on the cooled base.
  • 5. Prepare the ganache: bring the cream and coffee to a boil, pour the mixture onto the broken chocolate (I have disks) and stir quickly until a smooth mass is obtained. Add oil and liquor, pour over prunes and refrigerate.
  • Done!
