Ingredients

egg 2 pcs.
sugar 300 ml.
soft cottage cheese 200 gr.
wheat flour 300 ml.
baking powder 2 tsp
melted margarine 100 ml.
For glaze
lemon juice 1 tbsp. l.
powdered sugar 1.5 tbsp. l.
lemon zest taste

Cooking method

  • Curd muffins (Rahkamuffinit)Beat sugar, eggs, cottage cheese and margarine, add flour mixed with baking powder, knead (do not beat) until smooth. I draw your attention to the fact that the amount of sugar, margarine and flour is given in ml. The author of the recipe recommends using "Valio" cottage cheese, I have not seen this here, I took "Nuvo"
  • Curd muffins (Rahkamuffinit)We lay out the dough in muffin tins (fill no more than 3/4) and send it to the oven preheated to 175C for 20-25 minutes (until tender)
  • Curd muffins (Rahkamuffinit)For the glaze, mix the icing sugar and lemon juice
  • Curd muffins (Rahkamuffinit)Spread some glaze over the cooled muffins, decorate, if desired, with chopped lemon zest.
