Cooking method

  • I have been cooking these lean, very tasty cabbage soup for many years and everyone who tries them asks for a recipe. And so let's start blessed. Sort the groats, rinse and boil in a little water for about 5 minutes. Drain water and cereals into a sieve and rinse. Pour water into a 4-4.5 liter saucepan (about half), boil. Meanwhile, sweat the carrots, chop the cabbage, chop the onion and add a pinch of salt to slightly grind the vegetables. Add chopped tomatoes and peppers, a spoonful of vegetable oil and leave for 20-30 minutes. If the water has already boiled, add washed pearl barley and peeled and chopped potatoes. Cook for 15-20 minutes. Prepare the mushrooms at the same time. If it is champignons or oyster mushrooms, fry for 1 tbsp. a spoonful of vegetable oil. If it's frozen mushrooms, just add to the pot along with the potatoes. If you use dry mushrooms, make a piston out of them, grind them in a mill or coffee grinder and put them in the soup at the beginning of boiling. And you can simply cook without mushrooms, if they are not there or you do not like them. If instead of potatoes you take frozen beans, it will also be very tasty, but they are cooked less than potatoes. After 20 minutes, add the vegetable mixture (carrots, cabbage, etc.), cook for another 15 minutes, then creativity begins. We bring cabbage soup to taste, add salt, pepper, dry herbs or fresh herbs, garlic, chili pepper, to your liking. Turn off the heating and let it brew for 15-20 minutes. And the next day they are even tastier.

It actually takes longer to write than to do. This recipe was shared with me by a familiar woman who has extensive experience in cooking lean dishes, for which I constantly thank her. This dish can be cooked completely without oil, at any time of the year, having frozen vegetables, herbs, mushrooms. I really love spinach and began to add frozen at the end of cooking (along with garlic and fresh herbs) and turn it off immediately. Prepare and fast with a pleasant fast. The pearl barley is cooked and ready-made is taken out of the freezer as needed. Dressing is made from onions and carrots with the addition of tomato. Water boils - potatoes are filled up. It boiled for a couple of minutes - add the pearl barley, the pearl barley boiled - add the stewed sauerkraut and dressing. This is how we get very tasty cabbage soup.
