Cooking method

  • Pike perch 1.5 kg approximately, of course, fresh, not frozen
  • We wash the fish well, take out the gills, make an incision on the abdomen and cuts on the back, above and below the ridge, respectively.
  • We get two fillets on the skin with scales.
  • Remove the fillets from the skin (hold by the edge of the tail and draw with a knife under the fillets along the entire length)
  • We put the fillets aside.
  • Put the head, ridge with tail and skin in a saucepan.
  • Add 2 medium onions with husks, I throw away the one that falls off myself, but I don't clean the onion itself. But you need to rinse thoroughly.
  • A couple of medium carrots
  • Celery stalk (optional)
  • A clove of garlic
  • Peppers, allspice and laurel.
  • One and a half liters of water
  • We put on fire and cook over medium heat for 30 minutes. Salt stronger than soup. The broth should taste like a little salty
  • We filter.
  • We take a clean pan, pour out our clear broth and let it boil.
  • The turn came to the fillet. Cut into box-sized pieces and put in broth. Do not mix. We are waiting for 20 minutes.
  • Turn off and remove from the stove.
  • Soak gelatin in cold boiled water according to the instructions on the package. I took a tablespoon (10 grams) of regular powder and poured 150 grams of water
  • Lay the "decorations" on the bottom of the form.
  • It can be halves of quail eggs (cut to the bottom), carrots, cranberries, parsley, lemon circles. Everything according to your preferences.
  • Put our fillet on top
  • Put the swollen gelatin in our broth and mix for a couple of minutes.
  • Gently pour the broth into the molds with a ladle. It is allowed if some files will slightly look out of the broth. It will still be the bottom.
  • Can be made immediately in portions and poured into molds for sand baskets or silicone molds for cupcakes.
  • We put in the refrigerator overnight. Although I had it ready in a couple of hours.
  • Before turning it onto a plate, put the form in warm water for a second.
