Spicy whole grain bread with raisins

Ingredients

Whole grain flour 550 g
+ 1-2 st. l.
Warm fresh milk to 30 * С 125 ml
Water 125 ml
Salt 1.5 tsp.
Buckwheat honey 1 tbsp. l.
Vegetable oil
(used sunflower)
2 tbsp. l.
Yeast 1.5 tsp.
Egg 1 PC.
Kvass wort 2 tbsp. l.
Syrup 1 tbsp. l.
Rye malt 1 tbsp. l.
Raisins 110 g
Bread Grain Mix 0.5 tsp

Cooking method

  • The dough was kneaded in a bread maker on the Dough mode, at a time of 1.40. The spice mixture and raisins were added 5 minutes before the end of the kneading.
  • The second proofing in the oven at 30 * C.
  • Baking in the oven at 180 * C, with a decrease in temperature to 165 * C.

Note

The bread is finely porous, very soft inside. I laid it on its side to cool, the bread could simply settle under its own weight.
The bread tastes like buckwheat honey, must, a light aroma of spices and a slight sweetness from molasses and raisins, and a subtle bitterness. Thin crispy crust.
